yummy meatloaf - Wednesday, September 17, 2008 9:46 PM
I just made a meatloaf and d*** is it good.
I found the recipe this morning somewhere

Good stuff

-1 pound of ground beef (you can also use ground turkey)
-1/4 cup of parm cheese
-1 tspoon of parsley
-approx 6 thin slices of cheese
-1/4 cup of onions
-1 cup of bell peppers
-1 colve of garlic
-1 egg
-approx 6 strip of turkey bacon

oven 350 degrees

-in a nonstick pan grill peppers, onions, and garlic
-mix beef, the peppers n' onions, all ingredients except for the cheese and bacon.
-lay the beef mixture flat on wax paper or foil paper
-put slices of cheese and the slices of bacon on top
-roll like a burrito
-transfer to a pan w non stick spray
-make sure the seam is on the bottom
-I added tomatoe sauce on top
-bake for 1:15
I know my neighbors are jealous! Stuff smells so good...

I absolutely love meatloaf!!

What if I can't have tomatoes/ketchup?  Any suggestions for a substitute to keep it moist and good?

Would it be okay if I just left it out?

The egg will help keep it moist, and I also take a couple slices of bread (no crust) and soak them in milk, then lightly squeeze out some of the milk and mix the bread in with the meat.
