wooooo doggy! i love me some sweet potatoes! lol. yea you can boil em and then when they're soft slice 'em open and mix up the insides with butter and brown sugar. mmm-mmmm good!

argh!!!! rippedchick, you used the "B" word LOL! i hear they are a good source of low GI carbs so have started having them in the afternoon with cooked chicken! they taste nice! Low GI carbs during the day and high GI postwork-out; seems to have some science behind it. what do you think?

I substitute low fat cottage cheese for butter. eg. baked potatoe with lots of fresh black pepper and 4 tbsp of cottage cheese.

no these(butter) are sweet potatoes not baked(butter) potatoes. sweet potatoes(butter) were made for yummy(butter) sweets! mmmm... sorry tim (butter)

Sweet potatoes are very popular down here in New Zealand, we call them kumara (which is a Maori word). They have low GI and so are an excellent carb for me as I am carb sensitive. We do a favourite which is glazed, baked kumara in the oven with pineapple and brown sugar sprinkled on top (hmm, yes I suspect there is butter dotted on top too). Very delicious. It's a Xmas dinner favourite. Mashed kumara is also delicious with a strong tasting cheese mashed in. Regards Jill from NZ

aside from really making my mouth water right now, you guys are killing me!!!!!!!!! butter and sugar!?!?!?!?! for an endo like me, is that not a recipe for disaster!?!?! does sound really good though!!!!!!!!!!! might just try smilenoddream's recipe as my cheat meal this weekend!!!!!!!!!

Yeah glazed kumara is certainly not an every day thing in my diet (being a. an endo and b. carb sensitive), actually in truth it's a once a year thing at Xmas really. But still delicious. My personal trainer introduced the low GI/high GI carbs thing to me and it certainly seems to be an answer around my food and overeating issues. I get no cravings at all to overeat these days. I've also read a book called Syndrome X which is about carb sensitive people like me I belive. Somewhere along the line the insulin pickup receptors on my cells don't work efficiently so I end up with way too much insulin running around inside me (esp. if I've eaten high GI stuff which produces an insulin surge). My trainer says the whole eating plan is around spending about year retraining my body and avoiding insulin highs or lows. Anyways it's interesting and it's working. Regards Jill

SND, a whole year to retrain your system!!!!!!! damn. well the journey starts with one day at a time so just 330 days to go!!!!!! yeah, i am in the same boat as yourself ( carb senstive, endo!) well at least quicker muscle as well!

Yeah well apparently it takes a while to retrain the body to use the fat stores for energy and not just the stomach food or something like that. I don't really understand it all but believe now that for me as an endo and carb-sensitive type , that this type of eating is a long term answer. Avoiding the insulin spikes and lows and keeping my blood sugar as balanced and even as possible is the way to do it over the long haul so I have been told. But like you say it's one day at a time really. Proof is in the actions and I've eaten this way for 7 months now, I don't get cravings and don't feel deprived. It's not that weird really and isn't hard when we go out to eat. It's just how I am and food is just fuel today. have a great day Tim, regards Jill from New Zealand
