starting to feel hopeless

hello
I am just becoming so discouraged.  i have been working out for about a year and, although I have gained muscle and strength, it is moving at a very low speed. One of my goals is to be able to do pull-ups. I've heard about plateaus, but I feel like I often change my workout plans.  Maybe i don't stick to one long enough?
I tried circuit training, I've tried the basic 3 sets of 10-12, slipt days. 
I'm wondering if my nutrition has someting to do with it.  I think i'm sort of clueless as far as coming up with a nutritional plan for my goals. protein, carbs, fats, calories....i get so confused. I rarely eat fats except for nuts.  I would really benefit from a trainer slash nutritionist but can't afford one. Im 5'9 at 169lbs, could use to lose a couple. I also want to look more defined, which might be counteractive to getting stronger?
anyone know of any websites that can tell me exctly what I need to do, eat, workout to reach my goals?
I know i just unloaded a lot

There can be many solvable reasons for this, trial and err, let's see what your doing now as for diet and training, foods, sets, reps etc and maybe we can come up with some winning ideas to help you get some faster results.

That is possible but also maybe just applying the right combo will be your key, maybe you just have not found the right groove quite yet but have been touching on some success so you are on the right track.
Pullups are tough, I got them by having someone spot me to 10.  I began with 2x10 twice per week, 2x12 twice per week, 2x15 and these was a weekly change but I had a spotter push me through to get all the reps.  I found this really helped my body adapt, and within a year was able to do 4x12 on my own and began to add weight.

Log your diet and post it for me for a few days so I can see........I can help you with plan based on your eating habits.  You can define and strengthen.  There are some cookie cutter sample programs but if you want something more specific, log your diet and I can help.
Even better, start an online journal here where you list what you eat and do and then I can really lead you toward results if you are willing to put in that effort to log and check here often and work with me on it.
The Online Journal section is where you want to go, and take a peek at mine while there, it shows some diet and training plans and such which may give you idea or show you a pattern.

There are some diet samples in the fitness figure section I think.....and in the nutrition threads here.
