I thought my broke-butt would save some money and go out of town this weekend. So I started to cook up some stuff.

I just made mashed cauliflower. I found a recipe and modified it to whatever I had available. They look and taste like mashed potatoes. They are great I ate them with some roasted chicken I got at Albertsons.

1.1 bag of frozen cauliflower
2. low sodium chicken broth
3. two garlic cloves chopped
4. dried parsley (about two teaspoon)
5. finely copped green onions (3 stems)
6. butter (I cannot believe it is not butter)
7. salt and pepper

Boiled the first two indredients.
I roasted the ingredients 3-5
I blended the cauliflower in blender.
Transferred the blended cauliflower in a bowl and added the parsley, green onions, garlic, butter, salt and pepper.
