rest time

I have always been told to give each muscle group 5-7 days rest.. my split usually goes 
day 1- legs
day 2- back
day 3-chest
day 4- arms
day 5- shoulders
day 6- rest

i am trying to gain more mass/strength on my legs.. is that rest enough or should i cut it to 3 days or something twice a week? (i also run 2 miles, 3 days a week)

I would say 5-7 would be too much. At the schools weight room, the coaches have us doing squats one day and deadlifts the next. 4 days a week and as long as your feeling good and your legs are fine I would lower it to 3-4 days. We also usually do leg extensions 75 percent of the time. Give it a shot, and if you don't like it you could always go back.

(By the way I do leg extensions/curls usually everyday at my house.)

Way too much time. At most, 3-4 days rest.

What you have is a bodybuilders split, it might work for people using PEing drugs, where they just stay in the gym for hours on end destroying a muscle and giving it time to be built up, but for most people it is way to much. They are lots of routines, none are wrong, including this one, but for optimized gains most people should be getting each body part atleast 2 times every 8 days imo. And for alot of people (including myslef) doing each body part 3 times a week works great when your starting out, and to an extent even after that.
Goals by end of 2009:
Bench 205
Squat 255 ATG
Squat Clean 185

Something like 48-72 hours is normally sufficient.

I personally am not against split routines. I gained a lot from doing them while staying natural all the way (I have NEVER even considered of taking steroids).

At some point in my lifting journey, I did something similar to the routine the OP posted. Indeed, I gained almost 40 pounds on my 5 RM squats.

Key point to note is that, there are a lot of ways to train. Don't just believe in a particular training philosophy. Just try the routine out, and listen to your body.
