I cooked with this the other night - its fantastic! subs perfectly for couscous, will probably try it instead of rice some time soon. Big quinoa fan all the sudden here.

I do like quinoa as well. It is a nice change from rice and couscous every one and a while. I actually have been buying pasta that is made from quinoa and it is pretty good. I think I like it more than whole grain pasta because it's not as gritty.

I have been getting some good whole grain pasta lately. Can't recall the brand at the moment, seems I got it at Wal Mart, but it was pretty good stuff.

The only quinoa I could find in my grocery store was bulk in the health foods aisle. So I have over a pound of it. How do I cook it?

I usually soak it in water for 20-30 min and stir it. Drain it and put 1 and 1/2 cups water for every 1 cup of quinoa. Bring to a boil, cover and let it simmer for 15 minutes. Fluff with a fork like you do with couscous. It is fine plain but there are some good recipes out there that make it really good.

I sometimes mix this stuff in with my pasta - just for an added difference in texture. Keeping things mixed up and eating a variety of foods helps me sustain a decent diet.
