quinoa curry - vegetarian one-pot meal.

dice and saute 1/2 onion, 1 bell pepper, and 1 carrot in olive oil until soft. add more veggies, like celery, if you want. pour in 1 cup of uncooked quinoa, and mix well. pour in 2 cups of stock - vegetable, chicken, whatever. bring to boil. turn down to simmer, throw in 2-3 chopped tomatoes, a small handful of raisins, a can of rinsed beans, 1 Tb curry. Cook, covered, for 20-25 minutes. serve with a dollop of yogurt on top, mixed in. Could probably mix spinach leaves in at the end too. Good one pot meal.
