I've read countless times about how one who wants to lose weight or be in good fitness should eat about 5-7 meals a day. Why not just eat when I feel hungry? How does making yourself eat on a schedule, even when your not hungry, actually help you keep fat off?

Looking at it like that when I eat when Im hungry, I end up eating about 2-4 meals a day, each meal usually not consisting of more than 300-400 calories. Is this still considered unhealthy?

Well, let's start at the very beginning.

1.   What are goals?
2.   What is your calorie requirement for (1) maintenance and (2) your goals?  See http://www.discussbodybuilding.com/m_135283/mpage_1/key_hell%2ccalorie/tm.htm#135283
3.   What is your gender and age?
4.   How long have you been exercising, and if so, what kind of exercise?

Right now, knowing nothing about you and unless you're a midget, your calorie intake is really low.  You might be putting your body into starvation mode, which means that the body is going to be driven to store what it can as fat.  If you're trying to get bigger, this will not work.

It is important to listen to your body, but you also have to be absolutely in tune with it, too.

Eating on a schedule will constantly keep your body's metabolism up, hence you burn off more calories. If you wait until you get hungry more than likely your body has begun entering a catabolic state which is not what you want.
