I just bought a Healthy Recipe book and it has 500 Recipes, including soups, salads, poutry, meat, fish and seafood, Breads, and desserts. So I can hook you up if you are in need of ideas

for chicken - something that i can make in 10-15 minutes after work

with salad - something that i can just throw together in a few minutes while the chicken is cooking Smile

sheep, i can hit 2 birds with one stone and get a CHICKEN SALAD

give us one or 2 recipes for chicken salad - the quickest and easiest ones.

the chicken tarragon pasta salad sounds tops!

What i'll do is i give you a recipe, if you try it and like it i'll mark it, and then i'll post i sticky of the best recipes that are tried and tested!

Chicken Tarragon Pasta Salad

12 oz Fusilli or Rotini
12 oz boneless skinless breast cut in 1 inch cubes
1 1/2 cups chopped broccoli
1/2 cup diced carrots
1 1/2 cups diced red peppers
3/4 cup diced green peppers
1/2 cup diced red onions
Dressing
1/2 cup 2% yogurt
1/3 cup light mayo
3 tblspoon lemon juice
1/3 cup chopped fresh tarragon or dill(3 tsp if dried)
2 1/2 tbsp honey
2 tsp crushed garlic
1 1/2 tsp Dijon Mustard

Directions
1. Cook Pasta in boiling water until al denté.  Rinse with cold water, drain and place in serving bowl.
2. sauté chicken till no longer pink (approx 3 min). Cool and add to pasta
3. Blanch Broccoli in boiling water until tender (personally i think steaming would be better).  Drain ad refresh with cold water; add to pasta. Add Peppers ond onion.
4. Make the dressing: Combine yogurt, light mayo, lemon juice, tarragon, honey, garlic and mustard until mixed. Pour over Pasta and Toss.

Salad and dressing can be made the day before, do not toss until ready to serve.
Serves 6-8

Rice, Black Bean and Red Pepper Salad

2 cups water or chicken stock
1/2 cup wild rice
1/2 cup white rice
1 cup chopped red peppers
1 cup chopped snow peas
1 cup canned black beans, drained
1/2 cup corn kernels
1/3 cup chopped red onions
1/3 cup chopped fresh coriander or parsley
1 medium green onion, chopped

Dressing
3 tbsp Olive oil
2 tbsp lemon
1 tbsp Red wine vinegar
1 tsp minced garlic

Directions
1. Boil Stock/Water in sauce pan, add rices.  Cover, reduce heat to medium low and simmer 20 min until rice is tender.  Remove from heat and let stand for 5 minutes or until all liquid is absorbed.  Rinse with cold water and put in large serving bowl.
2.  Add Red Peppers, snow peas, black beans, corn, coriander and green onion to rice and toss to combine.
3.  In small bowl whiskdressing ingredients.  Pour over sald and toss well.

Serves 6

Its quite tedious for me this typing business hehe, I made like 50 mistakes typing each recipe and it took forever, i'm really slow and forgetful in my old age (I'm not even 20 yet) but where has my brain gone?
