Well, soy nuts aren't raw. And you shouldn't eat raw soy because it contains some sort of enzyme prevents digestion of the soy and other foods you eat. The enzyme is destroyed by a modest amount of heat and/or fermentation (any soy product you get is either cooked or fermented). Raw peanuts are not good to eat either. Even if they were good to eat, they're actually revolting raw (I've tried them). I don't recall ever seeing raw cashews... Are raw walnuts OK to eat? IIRC, they have more omega-3s than any other plant source aside from flax.

Since the consistancy and flavor was so radically different from "regular" nuts (felt and tasted raw), I never saw a need to question it. Maybe they were "raw" like sushi is "raw"???

I have a theory on the peanut thing. Peanuts aren't nuts, botanically. They are legumes. Peanut oil has a higher "smoke point" than other oils, so maybe the peanut oils remain viable after the relatively low roasting temperatures? Also, pecans are good uncooked, but I don't know about it's omega 3 content when compared to others.
