It was really interesting to find this recipe this morning! I modified a banana muffin recipe yesterday and went exploring this morning just to see how close I had come to something that someone else may have tried. I was very pleased with myself! I had gastric band surgery done and have to eat extremely high protein/low carb foods. This was great because it filled the bill for both. I used vanilla whey protein powder, unsweetened applesauce and five bananas. I can't use "regular" types of milk; I can only use Hood which is a very low carb milk so that's what I used in the recipe. They were good and I will try them again.

I changed the flour on this one and it worked out quite well. To increase the protein content I replaced the flour with half soy flour and half quinoa. Soy flour has the highest protein content of any flour (to the best of my knowledge) and although quinoa has a slightly lower protein content than soy, it is a 'complete protein'. A complete protein is one that contains all eight essential amino acids.
