This is one of my favourite creations at work

Cajun Chicken Caesar Wrap
(to make one wrap)
1 Small chicken breast
1 Flour tortilla
1 handful of romaine lettuce
1 tsp- 1tbsp Caesar dressing
1 tbsp Cajun spice

Cover the breast in cajun spice completely, it helps if you have a lot of cajun spice in a container and can just dip the chicken breast into it.
Grill breast
Toss lettuce with dressing
Slice breast into strips and lay along flour tortilla, along with lettuce
Roll it up, fold the bottom up to avoid a mess, and enjoy!

here's what I do with chicken sometimes.

Chicken nachos.

defrost a chicken breast,  pour a small amount of oil in a pan, and bake it in the oven for 30 mins on 350 degrees F.

pull it out,  slice it up into cubes without burning yourself
get a big bowl, and put some chips in the bottom of it,  cover it with some pinto or black beans (whichever you prefer).    put the cut chicken on top of the beans.

at this point you can add lettuce, or tomato if you wish.

i add cheese, and sometimes some avacado which is optional as well.

pour some green salsa verde, and also some red hotsauce on top, and eat.  SOOOOOOO FREAKIN' good.






also, for easy fajitas, i do the same thing with the chicken, and slice it into strips.  toss it into a low fat tortilla with a lil cheese, maybe some avacado,  onions sometimes.. and lots of hotsauce. YUM YUM YUM!

fajitas???
 
 
-3 bell peppers cut into strips
-1 onion chopped into big pieces
-lime juice..NOT LEMON--- LIMES!!!
-approx pound of chicken breast
-olive oil
-cumin
-cayenne pepper
-pepper flakes
-hot sauce
-salt
 
-In non stick skillet and cooking pray cook chicken
-add salt to chicken
- once chicken is cooked add the peppers, onions, all seasonigs, pour some lime juice add some water pour in about 1 tablespoon of olive oil
-simmer for like 10 mins on low heat I will let it cook until the liquid is gone.
 
I like to put more lime juice on top and some hot sauce YUM!!!
 
You can also add some shrimp for a chicken/shrimp fajitas---even more YUM!!!

2 cups of chopped celery, bell pepper, onion, and cabbage
1 cup of brown rice or peas
Chicken breast cubed
mayo and mustard  
mix it up in bowl add salt, pepper, basil, parsley, splash some lime on it.

Pollo Con Queso
 
You can find in most mexican restaurants, but you can modify it at home to make it a healthy meal. And it tastes absolutely wonderful.
 
 
You'll need:
 
Chicken Breasts
Rice ( of your choice ), i usually use brown rice.
Mexican White Melting Cheese ( you can find in the dairy products section of your grocery store )
Jalapenos
Chiles
 
( Jalapenos and Chiles are optional)
 
Grill your chicken breast or sear it in a hot pan.
Cook your rice about 2 cups of it.
Take the cheese and cut into small chunks and melt into a microwaveable bowl.
 Heat cheese for 1:30 mins , and then stir, then for 30-45 seconds multiple times, making sure to stur. Melt til creamy.
 
Slice Jalapenos and chiles, and then dice into very small pieces. Take the seeds out if you dont want it to be to hot.
 
Remove the cheese and add the jalapeno and chiles diced pieces to the cheese and let cool slightly.
 
Lay rice on a thin/thick layer on your plate, place grilled/seared chicken on top. Make sure cheese is still creamy and pour over the chicken.

My version of chicken marsala.
 
Chicken - breasts
1 can of no sugar added Hunts Spaghetti sauce (or make your own - low sodium/low sugar)
1 can of mushrooms
 
cook chicken until pink is gone (cut up in cubes if you want). Then throw all the ingredients together and cook for an hour or so on low heat - let the sauce infiltrate the chicken.
Serve over pasta or rice or nothing. i like to serve with a spinach salad.
 
Wonder what this tastes like chicken.
chicken - breasts
1 can of Ro-tel tomatoes with green chilies.
 
(i also use diffent types of salsas for this)
 
Place chicken in a backing dish and pour 1 can of Ro-tel over - back at 350 until done.
 
Any tomato type sauce/product I buy I always search for the one with the least amount of sodium and sugars. 
Making your own spaghetti style sauce saves a lot on the sugars! 
 
If you OVER cook your chicken after its marinated - it kind of tastes like a jerky of some kind - therfore I am adding it as a recipe. I've gotten to the point where the thought of eating chicken makes me nauseated - so something different is always good - even if its burnt beyond recognition chicken.

That's some good sounding stuff ya'll!

This has become one of my favorites lately:

Chicken Picado

1 tablespoon olive oil
1 medium onion, chopped
1 green bell pepper, cut into 1-inch pieces
1 pound boneless skinless chicken breasts, sliced across the grain into thin slices (1/8 to 1/4 inch thick)
1 can (14.5 ounce) Hunt’s Diced Tomatoes with Roasted Garlic, undrained
1/2 teaspoon (or more to taste) crushed red pepper flakes
1/4 teaspoon ground black pepper
Salt

Refried Beans (optional)
Spanish rice, (optional)
Flour tortillas (optional)

Heat oil in large skillet over medium-high heat for 1 minute. Add onion and the bell pepper; cook 5 minutes, or until crisp-tender. Add chicken; cook 5 minutes, or until no longer pink in center.

Stir in tomatoes with their liquid, red pepper flakes, black pepper, and salt to taste. Bring to a boil. Reduce heat to low; simmer, uncovered, 20 to 30 minutes. Serve with beans, rice, and tortillas if desired. 

Or the old stand-by:

Bag (half dozen) of chicken breasts
Cheap honey barbecue sauce ($0.68 at WalMart)

Coat a large baking dish with olive oil or cooking spray.  Lay out thawed breasts in dish, brush liberally with bbq sauce.  Bake for 30 minutes.  Remove fat from baking dish, brush on more bbq sauce, bake for another 10-15 minutes.  Remove when the breasts are at 165*

This, and a bulk bag of veggies and potatoes makes for a weeks worth of lunch for around $2 a day.

Chicken Enchiladas
 
hope it makes sense.  
 
1. Boiled chicken breast. Shred/pull it apart
2. corn tortillas
3. canned hot sauce
4. chopped cabbage
5. chopped radishes
6. cumin
7. green onions
8. salt
9. pepper
10. cayenne pepper
11. olive oil
12. cheese-queso fresco (it is mexican cheese made of skim milk. it is very soft and it crumbles)  or mozzarella
 
1. Get a pan and spray with cooking oil. Add the boiled chicken breast, about a 1/2 cup chopped onion, salt, peppers, cumin, cayenne pepper. The I usually get a potatoe masher and mash the chicken in the pan. I usually end up with shredded looking chicken. I then add about 1/2 cup water and a tablespoon of olive oil. Let it simmer for 15 mins on low heat. Then set aside.
 
2. In another pan. Low heat add cooking spray and  the can of hot sauce. You are going to "fry" the tortilla in the the sauce.
 
3. Transfer tortilla to plate/platter. You add the chicken to tortilla and roll it up.
 
4. Top it w/ radishes, cabbage and cheese. You can also add salsa on top if you like.
 
For less carbs you can not use the tortilla and eat the veggies and chicken-like a salad. YUM!!!!!         
 
Splash some lime on it only if you use the queso fresco.
