I take 1 week off for every 12 weeks I workout.  You end up stronger because it gives your muscles enough time to rest

It's always good to still eat to bulk when you're resting- Some say it's even more important to eat well on your off days, since that's when your body's doing it's building.
But don't let the strength gains make you think about working each muscle group even less often- That's not how it works. Taking time off once in a while can definitely be beneficial- And yes, I've seen the same sort of thing happen to me after time off- But you should only do that once every ten weeks or so. The rest of the time, stick to a weekly routine. If you leave too much time in between every workout, your muscles can actually "forget" how to handle the heavy weight- Even though you might still have the right amount of muscle to lift a certain weight, when you're out of practice for the lift, you might find you'll have a hard time lifting it. Stick to your routine, take a week or so off every once in a while, and continue eating right all the time- Your body will definitely thank you for it, as you've already seen.

Yes a week off every 4-8 weeks can really get you past plateau and get more gains.  During that week you can do hiking or other activities you do not normally do, it is called active rest.
