Once your pretty cut, how do you go about adding thickness but still maintaining the toned look? 

and what is the time frame for that, if say your average build and putting in 1-1.5 hours in the gym with a legitimate workout.

You don't. If you wanna get big eat more calories then cut back down. And it depends on how big you wanna get, but lifting is a life long thing, not something you do off and on or for a few years.
Goals by end of 2009:
Bench 205
Squat 255 ATG
Squat Clean 185
