best potato and eggs!!! - Tuesday, February 27, 2007 11:31 AM ( #1 )
this is recipe i got from my brother in law's father, an ex bodybuilder from gibraltar. First you got to cut up 1 kilo of potatoes into 1/2 inch chunks then boil for ten minute till cooked but not too soft.

second beat up 6 egg whites with six whole eggs and season with salt and pepper, then simply drain the potatoes well pour them into a non stcik frying pan and cover with the egg mixture, cook slowly for ten minute till it form like an omelette/ potato cake when it is set and brown on all sides is done. you can eat it hot with chicken or fish is best.

but the best IMO is to let it cool, put it in the fridge and carve off a slice whenever your peckish, great for lunch at work dipped in ketchup!!!

a great high protein, high carbs, low fat lunch ideal for bulking!
