I found this recipe that was apparently in a book of food for toddlers. But it was so good, I had no intention of sharing it with my 3 yr old. Slice a couple of zucchinis lengthwise, so they are around 1/2 inch thick. Nuke them for a few minutes to soften them up. Then lay them on a baking sheet. Top with a little pizza sauce and your choice of pizza toppings (I did chopped mushrooms and tomatos) and a little mozzerella cheese and oregano. Bake at 350 for 15 mins or so, until the cheese is melted and bubbly. This is pretty low fat (the only fat being in the cheese and you don't use a lot) and broke the monotony of the usual side of veggies. You could add meaty pizza toppings if you are not concerned about fat.
