Working Out Again

I came here back in 2006 asking questions on how to get leaner and bigger, but, I made a big decision in my life which was joining the Army, so stopped working out around October 2006 and then left for the Army in January 2007. I left at 175lbs, and completed Basic and AIT at 165 lbs. I'm 6'3, so I'm sure I look skinny as hell, I figured I'm going to start working out since all we do in the mornings is switch from running to sit ups/push ups for 5 days. I'd like to get more cut and add more muscle, but, not get huge. Also, since I am a 31B (Military Police), I won't be doing PT as much, so I have to take responsibility for staying in shape, so I came here to get some advice on a good diet that is easy to stick with, and a work out plan.
