Is there anything in particular I should be looking for to be sure I'm getting a quality fish oil (Twin Peak? This seems to be right in your wheelhouse...)? Should I be looking at the DHA and EPA levels? If so, what kind of quantities should I be looking for?

Yes, you want the highest epa/dha leves possible PER GRAM of fish oil. NOW FOODS makes a Super EPA cap that is the gold standard.
