Well most people just hate eating veggie,here is an arabic recipe that can be healthy and delicious at the same time.

Ginger 2 big spoons
Garlic 2 big spoons
Black Pepper
Tomato Paste i can + add water to lighten  the paste ,should be
Salt
Onion
you can put a veggie mix
but i recommend
either

Peas
or
Okra

OOOOOOO!!!  DARN!   You had me up until the Okra 

HA HA HA HA HA!  No, really... that is a killer recipe!  I love Arabic cuisine.

There used to be an Afghan restaurant around here that made the most amazing concoctions -I'll have to get the recipes for them.  One of my favorites was baked apples with Afghan prunes and walnuts in a light tomato sauce, with a trace of yogurt, served with cardamom-infused rice.  Off the HOOK!

I like mutter paneer, very close but with the indian cheese and a few more spices. Not a fan of okra but love curries!
