Turkey and Rice Special

Makes: 5 servings

Ingredients:

1 pound boneless, skinless turkey breast
4 1/2 cups chicken broth
2 cups uncooked rice (brown or white)
2 teaspoons chicken bouillon granules
8 whole mushrooms, sliced
1 onion, chopped
1 teaspoon garlic, crushed
3/4 teaspoon poultry seasoning
1/4 teaspoon black pepper
2 tablespoons cooking sherry
1 cup frozen peas, thawed

Directions:

Rinse and cut all visible fat off of turkey breasts. Coat a 9-inch square pan with nonstick cooking spray (nonfat). Place turkey breast in a pan. Add 2 tablespoons of the broth, cover with aluminum foil, and bake at 350 degrees F for 15-20 minutes. Remove the foil, and bake for 10-15 more minutes.
Remove turkey from pan, and cool for 5-10 minutes. Cut turkey into bite-size pieces, and set aside.
Combine rice, 4 cups of broth, and the bouillon granules in a 4 quart pot. Bring to a boil over high heat, stir, and reduce to low heat. Cover and simmer for 45-50 minutes. Remove pot from heat, and allow to sit, covered, for about 5 minutes.
Combine the mushrooms, onion, garlic, poultry seasoning, green pepper, and sherry in a large nonstick skillet. Sauté over medium heat for 5-10 minutes. Add peas, rice, turkey, and remaining 1/2 cup of broth. Warm and serve

I'd say you can have it any time of day, but dinner sounds best to me
