Turkey Stir-Fry

Makes: 5 servings

Ingredients:

3/4 pound boneless, skinless turkey breasts
1 2/3 cups chicken broth
1 1/2 cups uncooked rice (brown or white)
4 ounces turkey sausage (at least 97% fat-free), diced
1 can unsalted tomatoes, crushed
1/2 cup celery, thinly sliced
1 green pepper, sliced
1/2 onion, chopped
2-3 teaspoon garlic, minced
2 teaspoons Cajun seasoning
Directions:

Rinse and cut all visible fat off of turkey breast. Cut into bite size pieces. Coat a large skillet with nonstick cooking spray (nonfat), and preheat over medium heat. Add turkey, and cook for 3-5 minutes.
Add remaining ingredients to skillet, and stir well. Bring mixture to a boil, reduce heat to low, and cover. Simmer for about 45-50 minutes.
Remove skillet from heat, and allow to cool for 5 minutes.
