Simple Recipe. Microwave 1 medium sized sweet potato until it's fully cooked, probably about 5-6 minutes. My microwave has a potato button that I push. Take it out, and carefully try to cube the cooked potato. Use a big sharp knife, and be careful cause it could get mushy if you aren't. Add a little less than a cup of non fat yogurt. There you have it. Ingredients: 1 Medium Sweet Potato, .6 oz. non fat yogurt. The yogurt's bland flavor surprisingly contrasts well with the sweet potato, make for a really good potato salad. I personally think the taste of the yogurt itself resembles many regular potato salads made with mustard and mayonaise, or whatever is used. The only thing wrong with my recipe is I've never made regular potato salad before. I thin you're supposed to boil the potato, but I don't have time to do that really. This is an easy side that's high in fibrous carbs and protein. I had it with a steak and it was great. Let me know what you guys think after reading the idea. I honestly would read that and at first thing "Gross." I think i tastes great, and it's super super easy to make. I had the crazy idea of maybe having one piece of bacon, made crispy, and cracking it up and putting it in there, just for a little salty flavor morsel or two to get thrown in there. If I try it I'll let you know. I just can't justify buying a pack of bacon to use it so rarely. However, they do sell that ready made bacon at the store now. I'm talking a very little bacon.
