What's the difference between these two?  What should athlete type people train for, strength or power?

For example; I play baseball.  I want to hit the ball further.  Obviously, there are many other factors (core, etc.). But in the end, should I train for strength, or power? 

I've been doing about 5-7 reps going down slowly, then bursting up.  Should I continue?

You'd want to train for power. Speaking in terms of physics, power is the amount of energy transferred in a given period of time. Hitting the ball farther means transferring more energy to the ball in a shorter period of time.

Strength is about the maximum amount of force that can be exerted. That would be good if you were training for powerlifting (which is poorly named, since it emphasizes strength, not power).

So, rep-wise, I would do 1-5 reps 5 times?  Slow, fast?

Lifting for power also usually means the reps are quick and explosive. Of course you don't want sloppy form so on the way back down keep it controlled before exploding up again.
