I made this tonight and it was awesome, and very easy to make. Marinated chicken breast Two wheat tortillas Cottage Cheese (about a cup) Jalapenos Red Hot Marinate a chicken breast (pretty much any type of marinade would be good) and grill it. After its cooked well, shred it or cut it up to small pieces. Heat the tortillas until they are warm and soft. Dice up some jalapenos, and top the tortillas with the chicken, jalapenos, some red hot, and lastly the cottage cheese. Makes two tacos, very good. you could add some lettuce and corn or other fiberous veggy in the taco and have some kind of beans as your starch and there's a complete meal!

I have this alot at my house, although I leave out the tortillas my wifes eats with whole wheat and she seems to have not had set backs from it at all. What brings it all together is the cottage cheese imo.
