Something 4 2 meals outa the day

I am a horrible cook.. My chicken tastes like DIRT!! I was wondering if anyone has some good (easy) recipes for 2-3 HIGH protein HIGH carbs meals?? I am very open to suggestions but I am also lactose intolerant.. No cottage chease, yogurt, milk.. you get the point Thanks ;)

ideas: - cook up a pot of brown or wild rice in chicken stock & spices. - let you chicken marinate in salsa overnight before cooking. the acids from the tomoatoes will make your chicken very tender. grill, top w. more salsa. then cut in cubes when cool. -steam veges of choice. sprinkle w. garlic salt. then mix tupperware containers of 1c. rice, 1c. chicken, & veges. - or cook a bunch of sweet potatoes (microwave a large one, peirced) for 10 mins. peel & eat w. the grilled chicken. add a salad or canned veges to this meal. -or whole grain pasta (if bulking this is fine), cook until tender. then add extra lean ground turkey cooked w. garlic, pepers, mushrooms & onions. top w. low fat tomato sauce. -brown rice w. 1 can tuna & sliced peppers and low fat Italian dressing is good.

I'm gonna try that first one.. SInce I have been on a chicken and brown rice binge anyways (totally tired of the plain taste of the chicken and rice)! I hope I do this right :) I really suck when it comes to cooking chicken!!

If your chicken tastes like dirt, then one of two things immediately comes to mind: 1. You're cooking the crap out of it. Don't do that. Ick! The thickest part should be slightly pink before removing from heat. Don't freak out; the residual heat will finish cooking it after you remove it and it will all be white. But it won't be dried up. Grilling (even indoors with a grill pan) gives you easy control over the cooking process. Use high heat to sear the poor bastards. It cooks fast this way, so don't wander off to see how the game is going when you're cooking it. 2. You're buying really low quality chicken. Dried up chicken can be partially salvaged with often verboten BBQ sauce or even fat free italian dressing. But a well cooked piece of chicken should be plenty tasty on its own, or with judicious (e.g., conservative) amounts of salt and pepper added. 3. So many guys wimp out in the kitchen with the excuse of "I'm no good at it." Well, you won't get good at it unless you practice. Be a man! Do you think the women in your life woke up one day and cooked like goddesses? Just like sports, even, well, bodybuilding, practice makes perfect. Get a good cookbook, and go. How to Cook Everything is a good beginner's guide with information on, well, how to cook everything (and shop for it). The recipes are ok. But you can graduate to more tasty recipes. The Cooking Light series, especially their greatest hits cook books (as opposed to the ones where they mush a year's worth of magazines into a book) are especially good. As a bodybuilder, you'll be able to recognize ingredients that should be exchanged or even eliminated (not everything is essential, but that comes with practice). Even Berardi has his Gourmet Nutrition cookbook, but I have to say, I wasn't that impressed with it. But hey, it was a freebie . . .
