You should never do chest and shoulders on back-to-back days.  You are using your shoulders and triceps heavily in every chest pressing movement.  I'd do Chest/shoulder/tris all on the same day.  And I wouldn't worry about overtraining.

Depends, but I would try to switch it up so shoulders get atleast 1 day of rest. Also are you lifting specifically for track or just want to lift? If your just lifting for track I would focus on shoulders and legs more, in which you could do light chest and tri's and I would say it would be ok to do the day after shoulders.
Goals by end of 2009:
Bench 205
Squat 255 ATG
Squat Clean 185

Yeah dont do that, since any pushing movement of the arms is done by your triceps. And when you work your chest you are doing pushing movements. Dont do them on back to back days
