Scallion Potatoes Makes: 8 servings Ingredients: - 2 pounds red potatoes, cubed - 1 tablespoon olive oil - 1/2 cup green onion, chopped - 3/4 cup skim milk - 1 tablespoon cornstarch - 1-1/2 tablespoons dill Directions: - Steam potatoes for 12-15 minutes. - Set aside. - Add oil in a nonstick skillet over medium heat and sauté green onions for 3-4 minutes. - Combine milk and cornstarch in a container with a lid, shaking until mixed well. - Stir into green onions. - Add dill and simmer until slightly thickened. - Coat potatoes with sauce.
