Roasted Chickpeas - Monday, February 23, 2009 12:21 PM ( #1 )
I love hummus, but ate too much of it over the last few months and burned myself out.  Now I stay away from it.  But, here is a freakin' tasty recipe for some roasted chickpeas:

1 can of chickpeas
1 tbsp coconut oil (or whatever oil you prefer)
Salt, pepper, garlic, and cayenne pepper to taste

Preheat over to 450 degrees.

If you are using coconut oil, you might have to heat it up a little first to get into liquid form.

Drain and rinse the chickpeas, throw them in a bowl, throw the spices in the bowl too, and then drizzle the oil over top of them.  Mix the chickpeas around so the spices and oil cover all of them.  Then put the chickpeas onto a baking sheet and roast in the oven until golden brown.

It took me 40 minutes to roast them.  They came out crunchy and delicious.

1 can supposedly makes 4 servings, but my girlfriend and I ate pretty much all of them.  Anyway, 1 serving has:

160 calories
8 grams of fat
20 grams of carbs
4 grams of fiber
4.5 grams of protein

Might give it a try. Anything with Cayenne in it is good.

I love chickpeas. Will try something along the lines of this out.
