Protein pancake/waffle 4 egg whites (I use 3 egg whites, and 1 whole egg) 1/2 cup steel cut oatmeal (regular oatmeal will do) 1/4 cup cottage cheese (used 0% fat, no salt) 1-2 packet splenda (optional) 1/2 tsp baking powder (can also omit if you like) tsp vanilla tsp cinamon Blend this up well. (I use a handmixer or a small food processor)... Cook pancake(s) on non-stick pan or coat it with PAM. Or use a waffle maker. If you are using a pan...cook on medium heat and carefully flip over once the top starts to set. I top it with sf pancake syrup or sf blueberry syrup. Yum!
