Protein pancake/waffle

4 egg whites (I use 3 egg whites, and 1 whole egg)
1/2 cup steel cut oatmeal (regular oatmeal will do)
1/4 cup cottage cheese (used 0% fat, no salt)
1-2 packet splenda (optional)
1/2 tsp baking powder (can also omit if you like)
tsp vanilla
tsp cinamon

Blend this up well. (I use a handmixer or a small food processor)...

Cook pancake(s) on non-stick pan or coat it with PAM.  Or use a waffle maker.

If you are using a pan...cook on medium heat and carefully flip over once the top starts to set.

I top it with sf pancake syrup or sf blueberry syrup. Yum!

I use extra large eggs so makes approx. two large pancakes or 3 medium sized ones.  The batter is a bit more runny.
 
I'll attach a pic of the ones I made w/ sf blueberry syrup. (I think a dollop of whipped cream would have gave it the finishes touches. LoL)
 
I also use  2 pkts splenda. and include the 1/2 tsp baking powder. If you don't have a handmixer just dump everything into a blender.
 
 

 
 
Here are the macros. for all of the ingredients listed using extra large eggs.  Carbs are Total Carbs - fiber. (I deduct fiber from my fitday counts).
 
 
Total Cals:
 
366 calories for total recipe.
 
Protein: 38 grams
Total Carbs: 29 grams
Fat: 9 grams
