Protein Cupcakes - Saturday, April 04, 2009 6:04 PM ( #1 )
I have been playing around with these because I have been trying to mix it up on my contest prep diet. This is what I have found to work the best so far.

2 scoops chocolate whey protein
2 serving of stevia
1/4 tsp of baking soda

spray cupcake tray with non-stick spray.
mix protein powder, stevia, and baking soda together with water until it reaches brownie batter consistency
pour batter into sprayed cupcake tray (usually about 3 for me and my tray)
fill rest of cupcake spaces in the tray with water
put into oven at 425 and cook until you can puncture and remove a clean toothpick from the cupcake (cooks really fast so make sure you are keeping an eye on them.

It is actually really good man. You should give it a try. I make mine with scivation chocolate whey. Of course, I have been dieting for a while now, so it might just taste good to me. lol.

Have you ever tried the scivation no carb brownie before? It is kinda like that, except fluffier and not dry.

Thanks man. I am 5'11 175 lbs and prob 5-6% bodyfat

No Idea on my maxes. All my workout for the past like 5-6 weeks have been in the 15-20+ rep range.

Thanks for the post.  It almost seems too simple.  I have alot of EAS AdvantEdge to use up so this recipe looks fantastic.  Thanks again.

No problem guys. Just make sure you only fill the cups on the tray up to right at half way b/c they will puff up a lot and can spill over if you are not careful.

Nope never tried those but I have made peanut butter cookies with a similar recipe but adding PB and oatmeal (oh and egg whites so I guess it's not really that similar haha). They would taste really good if left a little under cooked (the badder was great) but could be a little plastic-like.

so these don't have that plastic like consistency? I'll definitely give it a try and mix some peanut butter into it.

I am doing 2. The next and final one is this coming up Saturday. Thank the Lord. I am eating Domino's pizza by myself, and am getting a cookie cake and apple pie for my birthday since I didn't get to celebrate it when it happened b/c I was on my diet and at school. It is going to be great. lol

I know what you mean. After I did a serious cut for about 13 weeks of cardio at least once a day, sometimes twice, working out 3-4x a week and always being hungry I ate sooo much food, even went to a chinese buffet before pigging out at my relatives house (and this was christmas day too lol)

Quick question, these look great and i want to try em but dont have any stevia, could i substitute something like splenda?

Most protein powders already have a sweetener, might not even need an additional one depending on how flavored yours is.

hmm good point, im using chocolate malt flavored ON 100% Gold Standard, so ill prolly just taste test the batter as i add the ingredients.

true about the possibility of not needing additional sweetner. My protein isn't very sweet, so I added in a good bit. I also had a bit of a sweet tooth from the dieting when I was making these. Taste testing the batter sounds like a good call.

OK so i tried it with the splenda, and the batter tasted amazing!. However once i actually cooked them.... well i wasted about 3 scoops of protein. Mine turned out pretty dry and rubbery and while they were cooking they didnt exactly cook right, they kinda bubbled up into funny shapes.... any suggestions? Did i miss something?

I think it is hit or miss with them forming weird. I have made like 1 batch where they all looked perfect. I think it just depends on how much you put in each little tub. You might have cooked them a little too long if they were too dry and rubbery. You'll have to play with the time to get them right. It should be like a cake type consistency.
