OK, I whipped these up for the first time right after Thanksgiving with ingredients that I had laying around the house. They're usually associated with the holidays, but we bodybuilders tend to have them in the kitchen year round: Ingredients 6 oz Turkey Breast (I used smoked turkey breast, because I had one in the fridge, but you can use any kind, including turkey bacon, turkey sausage, or just strips of turkey) 1 medium Sweet Potato 1.5 cup Egg Beaters (or equivalent amount of egg whites) Salsa Fat Free Cheddar Cheese Whole wheat tortillas Instructions Peel the sweet potato and boil for 5-10 minutes. The potato should be soft-ish, but not so soft you can mash it (if it gets too soft, it's not a big deal, the texture is just better when the potato is a bit firmer... make these a couple of times and you'll figure out what's right). Drain the potato and run cold water over it to cool it down, and grate it into strips (you can dice or julienne the potato if you don't have a grater or just want a different texture). Cook the turkey in a skillet (if it's something like smoked turkey, you just need to heat it up and brown it a bit) with a little Pam. When the turkey is about 80% done, add the potatoes (you may need to add a bit more Pam) and toss with the turkey until the mixture is cooked through starts to brown. Push the turkey/potato mixture off to the side of the pan and add the eggs (again, you may need a bit more Pam and drop the heat a bit). Scramble the eggs until cooked through. Fold the eggs into the turkey/potato mixture, and add salsa to taste (I use 505 brand, but I'm not sure that's available outside of New Mexico). Cook until the salsa is warmed through (should take about 30 seconds), then remove from the heat, stir in cheese to taste (don't go overboard, you little piggies...), then serve in tortillas. If you want you can add other things to the mix, like a bit of corn, black beans, or green chiles. Have fun, but try not to add anything that'll add another week to your quest for those six-pack abs... This will make 2-3 servings depending on how big your potato is, if you add other items, and if you added a "little bit more" turkey. Sit back and munch away. And don't let the name fool you -- these babies make greak meals all throughout the day. I don't have a nutritional breakdown on this recipe, but you can sit down with all the ingredients and do the math yourself... At the very least, all of the ingredients and proportions are similar to what we normally eat in out diets anyway. Let me know if you like these!
