I heard that muscle put on before the age of about 18 tends to stay. Is this right?

From what I have read and learned on this forum site; Muscle no matter what stays if you eat and train right. No matter who you are, if you don't do things right and don't work your muscles, they will "sag." If your caloric intake falls to much and you go into "starvation mode" Your body will cannibalize your muscle tissue to conserve energy. Your muscle is a metabolically active tissue so turning it into glucose (this process known as 'Gluconeogenesis') so that you do not burn off calories fast enough to deplete your fat store and die... (stuck out in the wild without food) But with age muscle tissue is lost at a more rapid rate, If training is not continued.

They only get fat if they keep eating the same number of calories that they did when they were training. Contrary to what lard-butts would want you to think, muscle does NOT "turn to fat" just because you don't keep working it. The fat comes from continuing to eat more than you burn.

Yes this is completely correct, fat and protein are made up of totally different cells, so one cannot turn into another.
