Meatloaf Potatoes - Thursday, April 21, 2005 1:55 PM ( #1 )
I haven't made this myself yet, but I work at a restaurant and these new cook we have brought these in one day and they were awesome. I'm going to make them myself very soon. The best part is, you can make a whole batch of them.

1. Take regular or sweet potatoes and cut them in half, then cut out the insides to make them hollow shells. no point in throwing away what you cut out, make them into french fries or mashed potatoes.

2. Make some meatloaf. If you don't know how, ask your mom :) Try to make ones that have a couple different types of meat in them, such as beef and pork.

3. You want to make small meat loafs that will fit inside the potato shells. Place them in there and place them on a baking sheet and bake them as if you were baking potatoes and that's it.

You might as well make the insides you cut out french fries or chips b/c you can bake them along with the loafs.

If you don't like to eat potato skins, then that is why you made the fries/chips/whatever :)

enjoy!
