Low-Calorie Chicken Salad - Sunday, September 19, 2004 5:20 AM ( #1 )
I'm cutting for a show right now, and I came across a great way to eat chicken.

Take one good-sized chicken breast and cut into small pieces. Pour about 1 tablespoon of balsamic vinegar on the chicken to flavor it. Add salad to a bowl, and add the chicken. Add a cut up tomato. Add 1 tablespoon of olive oil and 1 tablespoon of flax seed. I also like to sprinkle on Caribbean jerk seasoning for flavor. Add a cover and shake to mix up the salad.

In case you don't know, the olive oil and flax seed are to add good fats to your diet. I'd stay away from these if you're already on a high-fat diet or have little control avoiding the bad foods, because then you probably don't need this stuff too. You can eat some rice on the side. I bet this would work well with salad noodles too, but I haven't tried it yet since I'm cutting now and can't have the high calories.
