Low cal - high protein banana bread

Here is a really low calorie banana bread I found - it makes 2 small loaves - the whole recipe is about 500 calories, minus the protein. It is not perfect so it takes some playing around with. I usually add one small scoop of protein but you can experiment and add desired amount and flavour. I have made it before without the protein and it is really good I am going to try it with protein soon. This bread does not rise as much as regular bread, but it's still good. NOTES: It does not last long, make sure to eat fast or freeze/keep refrigerated. Also, be careful with the baking soda and powders, if you put in too much to make it rise the baking soda can be rather overpowering. 1 mashed banana 1 Tablespoon of Light Melted Butter or Light becel 1 teaspoon of Rum Extract (I use vanilla) 1 cup of Splenda (if you don't use splenda, add another banana - the protein should sweeten it a bit too) Dash of Salt 1 teaspoon of baking powder (I add 1/2 teaspoon of baking soda as well or it won't rise well) 1 large egg (I use egg replacer - egg whites) 2 Tablespoons of Skimmed Milk Add the following dry ingredients to the bowl of wet ingredients: 3/4 cup of White Flour Add desired amount/flavour of protein powder Pour into two small, greased loaf pans and bake at 350 for about 15-20 min. Like I said though, not perfect - I am still modifying the recipe.

You can also add some dark choc chips which is really good!
