L'il Devilled Eggs - Sunday, October 05, 2003 12:51 PM ( #1 )
I was bored this afternoon (the Browns don't play until 8:30 est today), so I thought I'd mess around in the kitchen and work out a new way to eat eggs. Here's what I came up with:

6 eggs
1/2 c. lowfat cottage cheese
1/8 t. cayenne pepper (use more or less depending on how spicy you like things)
1/8 t. mustard powder (use more or less depending on how spicy you like things)
1/2 t. pickle juice
paprika

Hard boil the eggs. Peel them, cut them in half, and remove the yolks. Chill the yolks and whites for about an hour. Mix (in a food processor or by hand) the cottage cheese, 2 of the egg yolks (this might work with fewer yolks if you want to drop the fat content), the pepper, cayenne, and pickle juice until light and smooth. Spoon the mixture into the empty egg whites. Sprinkle with paprika and serve.

This would probably be really good if you swapped some smoked salmon for the egg yolks.

My mom used to make something similar to that.. not exactly.. but it reminds me of that recipe.. Good post!
