What muscles/exercises can I do to increase my kicking strength for soccer? Would just working on my quads do anything? OR...should I just do pylometrics?

You should do plyometrics - and you should incorporate them into your pre-season routine. Also get on general leg weights, don't train a specific muscle group too much... Athletic training is about power and strength, more so power - so general body building won't necessarily be productive enough...

Leg strength is part of it, but little guys can kick the ball hard too with correct form and correct distribution of power and weight. Its funny, the guy that generates the hardest shot on my team is one of the smallest. Ankle strength is a big part, too. Plyos are great, also any leg exercises... squats, lunges, leg extensions, leg curls... It will all help build muscle in the legs. But most importantly, technique, practice, and flexibility.

I would also recommend doing some kind of ankle-strengthening exercise, like with an exercise band or something of the sort. Also, learn to kick with more of the top of your foot. More power can be generated this way becase your leg is at less of an angle to the ball...

i used to be a talented soccer player before i quit, and to tell you the truth, leg strength isn't that much of a difference it's all about form. when you're shooting it, if you just make sure you keep it down and hit it right with the right part of your foot, you'll do fine. the place where your foot hits the ball and the speed at which your leg is moving is the biggest factor. it's all about impulse

Practice, practice, practice. Honestly there is nothing better than to go and just kick a ball into a net for a while. A good thing to do to increase power is to stand only a few yards away from the goal and try to hit the ball as hard and low as possible without it actually being on the ground while in flight. As soon as you get your form down from that distance, move to the 6 yard box, and then the PK, and finally the 18 and beyond, and try to pick out the low corners. Any keeper will tell you that the low, hard shots are the hardest for them to get.
