Italy meets Mexico Chicken - Thursday, August 25, 2005 8:57 PM ( #1 )
This is a killer chicken recipe that I've been making a lot lately.  Marinate boneless, skinless chicken breasts in fat free Italian dressing.  12-24 hours is best for really soaking in the marinade.  Fire up the grill.  Season the chicken on the side that is going face down on the grill.  Hit the chicken with 3 shakes of cajun blend, 3 shakes of crushed red pepper, 3 shakes of italian seasoning, 3 shakes of garlic powder, and 3 shakes of black pepper.  Do the same seasoning routine on the side of the chicken that is face up.  When chicken is done cooking(160 degrees internal temp) top with a pinch of shredded mozzarella and a pinch of shredded cheddar.  I like to nuke it for 30 seconds to melt it.  Then top with diced tomatoes and jalepenos.  I enjoy this with a side of brown rice and side salad.

Thank you for the kind words.  I aspire to compile a huge book of recipes all geared towards bodybuilding.  Hopefully one day I will get it in print.  It's really funny how some people think of diets like a death sentence when all it takes is a little bit of extra effort and you don't have to miss a thing.

I know what you mean about dieting..been at it forever it seems. LoL
 
I'm always searching for new recipes. Makes things are little less dull I guess.
 
So yeah...great idea on creating a BB cook book. Bet it will become a best seller too!
