Is it ok to increase my weekly cardio routine, and also further drop my calories by 500 to lose fat? I seem to have stopped losing fat in the last few days.

You could try increasing the frequency of cardio (maybe 2x a day or something for a short duration).  I'd be hesitant to drop calories AND increase the cardio.

You might just end up doing too much activity with too few calories and what you'll see is your body REALLY hold onto fat.

Many people would rather do a little more cardio or variety (intensity) then drop food. 

Up to you really but I would recommend against doing both as it might be too much too soon.  Your body is not responding for a reason.

If you enter the 'famine' mode, you'll hold onto more fat then you think.

Is there any chance that my body is no longer responding because my current balance of calorie intake and expenditure (due to cardio) keeps my weight there?
