I need help making foods less bland! - Saturday, February 21, 2009 6:48 PM ( #1 )
I am looking for ideas to spice up my grilled chicken, fish, oats and salads to make them less boring and provide a little flavor.
 
I'm also wondering how to make a healthy dressing for my salad.

good salad dressings, most often you should use olive oil, maybe some red wine vinegar, mixed with a bit of dijon mustard.  You can add other seasonings, herbs etc. to flavor it up.  Most dressings are a fat and olive oil tastes great.  Especially if it is extra virgin olive oil.

Lots of ways to do this Sparta. For chicken and fish try fresh lemon zest and fresh ground pepper. For rice, add a little chili power to the water. To up the protein and keep the fat and calories down cook lentils with your rice.

For Beef, pork and chicken marinade them in a 50-50 solution of red wing vinegar
and Worcestershire Sauce. This also helps to tenderize tough meat a bit. You can also add a bit of chili powder to this solution for a bit more flavor or when making Mexican food.

McCormick's now markets a Pepper melody that is packaged in a grinder and it is great stuff. You can also buy coarse ground sea salt in a grinder and both of these add some great flavor. Lots of other herbs and spices out there are can really improve a dull dish and many even have additional health benefits. If there is anything in particular you are looking for let me know.

My favorite way to do oats these days is 1/2 cup oats, 4 tbs PB, 4 tbs honey, handful of dried cranberries, sliced almonds and a little milk. Delicious and it sure fills you up.

1/2 cup uncooked cover with water, 1 min in microwave and add all the other stuff and mix.

Good old lemon peper but I think I recall it having some salt in it, some might not like that.

Yeah, a lot of that does that's why I suggested fresh lemon zest, better flavor and no added salt. All you need is a fresh lemon (or lime or orange) and a "zester", I think its called, which is a wood rasp like device that you scrape the lemon peel with.

I usually put a little jelly in my oatmeal.

Salad i top with red wine vinagerette and cottage cheese

Lemon pepper is great on fish and chicken

Adding fruit to most items make the dish tastier

Try adding natural chicken broth while cooking your rice for your meal.....Good stuff right there!

You can marinate all sorts of stuff in pace picante sauce.  chicken, shrimp, tofu...

Try pesto on chicken and fish, especially tuna, salmon! It's amazing. Come in different colours, green, red...Make sure it's made from olive oil. Or a japanese soy sauce is nice...Or one thing I made the other day, got som rogan josh curry powder, added garlic, ginger and tinned tomatoes, my god it was special!

Good one for raw oats w milk , total greek yoghurt dolloped on top with a drizzle of honey..mmm..Or get your oats (uncooked) mix up a protein shake, mix and hey presto you got some flavoured oats.

on your salads, I like balsamic vineagar as the base, instead of red wine variety.  go ahead & spend the money on good vineagar too, its well worth it.  the mix of vineagar, a pressed clove of garlic, olive oil, salt & pepper, maybe a splash of good mustard, can't go wrong.

Basalmic vinger is a an almost no calorie way to spice up and add flavor to salads etc...  I also use a little maple syrup in oatmeal and use cinamon in lots of things too.
