Im starting to go 5-6 days a week Mon,Wed,Fri working on chest and shoulders, while on Tues,Thurs,Sat tri's and bi's with abs everyday and legs whenever possible.
After reading some of the Max-OT routine that the muscles need a good few days to rest and build otherwise you will never gain size.(and in my case I want to gain aside from the abs part) So is doing this 6 day workout plan bad because im not giving my muscles a good amount of times rest? How many times a week should I just work each set of muscles? once? twice? and is a 1 day rest good?

I go a full 7 days before I directly work a muscle again.  I say directly, because almost every muscle gets worked indirectly in other workouts.  For example, tris get worked whenever you do chest and shoulders, legs get worked when you do squats and deads.  So in my case (doing Max-OT):
 
Mon, Legs: Squat (warm up sets) 12, 10, 6, 3, 1, (work sets) 3 x 4-6; leg extensions and curls or leg press 3 x 4-6.

Wed, Chest: Bench (warm up sets) 12, 10, 6, 3, 1, (work sets) 3 x 4-6; incline press 3 x 4-6; dips 3 x 6-8.

Fri, Back: Deadlift or rack pulls (warm up sets) 12, 10, 6, 3, 1, (work sets) 3 x 4-6; seated row 3 x 4-6; pulldown 3 x 4-6.

Sun, Shoulders & Arms: Seated ohp (warm up sets) 12, 10, 6, 3, 1, (work sets) 3 x 4-6; side raises 3 x 4-6; Curls (regular and hammer), triceps pushdowns 3 x 4-6 each exercise.
