How do you cook yams?

Can someone tell me how to cook yams? The canned variety are all in syrup. Just from assumptions, I imagine you cook them like regular potatoes. Thanks

I still want to know how you cook them, but I am looking on the internet for recipes. This one seemed interesting. CAROLINA YAM PATTIES 3 c. hot mashed, fresh Carolina yams 3 tbsp. butter 1 tsp. salt 1/8 tsp. black pepper 2 tbsp. sugar 2 c. corn flakes, crushed Combine the first 5 ingredients. Shape into 8 patties. Roll them in corn flakes. Bake on a buttered baking sheet in a preheated oven at 350 degrees for 20 to 25 minutes or until brown. Serve with pork, ham or poultry. Yield: 8 servings.1 cup mashed yams = approximately 2 large yams.

YAM BISCUITS: 1 c. cooked, mashed yams 1/3 c. melted butter 1 beaten egg 1 c. sifted flour 2 tsp. baking powder 1/2 tsp. salt Combine the yams, butter, and egg. Sift the dry ingredients together and blend into the yam mixture. Drop by tablespoons around the edge of the casserole. Bake in a 350 degree oven for 45 minutes.

KENNEDY'S YAM PUFFS 2 c. mashed yams 1 lg. banana 1 1/2 tsp. melted butter 1 egg 1 1/2 tsp. cinnamon Milk, several tbsp. Mashed yams and banana in mixer (or bowl). Add butter, egg and cinnamon. Blend well. Add milk gradually, just enough to make potatoes fluffy.Drop batter in mounds 2 inches apart on greased cookie sheet. Bake 12 minutes in a 500 degree oven until heated through and slightly browned. Makes 6 servings.

LOUISIANA 'POSSUM AND YAMS 1 med. possum 6 med. yams Season well with salt, black pepper and cayenne. Add 2 tablespoons vinegar and 1 cup water. Cover and place in refrigerator overnight. When ready to cook, place in pot with 1 quart water. Simmer about 1 1/2 hours. Remove from pot and place in a shallow baking dish. Slice yams lengthwise. Place yams around 'possum. Sprinkle 2 tablespoons sugar on yams. Pour 1 cup of liquid from pot over 'possum. (Remove excess fat first.) Bake in moderate oven (300 degrees F.) until yams are done and 'possum is tender.

LOUISIANA YAM CORN BREAD 2 c. flour, sifted 2 c. yellow cornmeal 2 1/2 tbsp. baking powder 2 tsp. salt 1/2 c. sugar 4 eggs 3/4 c. milk 1/3 c. salad oil 2 2/3 c. Louisiana yams, cooked & mashed or canned Sift flour with cornmeal, baking powder, salt and sugar; set aside. Combine eggs, milk and oil in large bowl; beat until smooth. Add yams; beat until blended. Add flour mixture, stirring only until flour mixture is moistened. Spoon into 2 greased 8-inch square pans. Bake at 425 degrees for 35 to 40 minutes or until breads test done. Cut into squares. Serve warm with butter. Serves 12.

NO FAT CHANUKAH YAM BARS 1/2 c. whole wheat pastry flour 1/2 c. "old fashioned" rolled oats 1 tsp. low sodium baking powder (e.g. Featherweight Brand) 1/2 tsp. pumpkin pie spice 1 tsp. ground ginger 1 1/2 tsp. grated orange rind 1 1/2 c. boiled, mashed yams 1/3 c. dates, chopped, dusted with 1 tbsp. flour 2 egg whites, stiffly beaten Combine flour, oats, baking powder, ginger and pumpkin pie spice in a small bowl. In a large mixing bowl combine mashed yams and orange rind. Add dry ingredients and mix. Add dates and fold in egg whites.Put into a 9 x 9 inch nonstick baking pan and spread evenly. Bake at 350 degrees for 30-35 minutes, or until brown. Cool and cut into bars. Makes 24 bars. Each bar contains approximately 42 calories. This is a non-fat, no sugar, oil, salt and non-cholesterol treat recipe!

SWEET YAM FRITTERS 2 whole large fresh yams, peeled and coarsely grated 2 tbsp. unbleached white or whole wheat pastry flour 2 tbsp. plain nonfat yogurt 2 tbsp. grated raw onions 1 tbsp. chopped fresh parsley 3 whole egg whites plus 2 whole eggs, light beaten 2 tbsp. peanut oil In a large bowl, combine grated raw yams, flour, yogurt, onion, parsley and beaten eggs and egg whites.In a medium skillet over medium high heat, heat oil until a small amount of batter dropped into it sizzles. Drop batter by spoonfuls into hot oil and quickly fry fritters on both sides. Drain on paper towels. Serves 6

TOMATO - YAM SOUP 1 lg. yam, cut up 3 sm. leeks, washed & thinly sliced 2 tbsp. butter 2 (10 1/2 oz.) cans chicken broth 2 lg. tomatoes, sliced or 1 can stewed tomatoes 1/2 tsp. salt (I omit) 1/4 tsp. basil (dried) 1. Saute leeks.2. Add all other ingredients. Bring to a boil; reduce heat and simmer about 20 minutes. 3. Puree. 4. Return to heat. Heat and serve. Preparation time: 30-45 minutes.

SOUTHERN CHICKEN AND YAM BROTH 1 lg. onion, peeled, diced fine 1/2 lb. bacon, finely diced 1 qt. chicken broth or stock 1/2 lb. chicken meat, cooked, julienne 1/2 c. sweet potato balls (pea size) 2 tbsp. parsley, chopped In a 4-quart soup pot, cook diced bacon until crisp. Add onion and cook until onion is tender. Add chicken stock and sweet potato balls; bring to a boil, then reduce heat to simmer and cook until sweet potatoes are done. Add julienned chicken meat and serve hot. Garnish with chopped parsley. Serves: 4-6. (Prep and Cooking Time: 1 hour)

the first recipe looked good, just substitute the corn flakes for oatmeal, and no sugar... They are sweet enough... Plain and simple I mash em, with a teaspoon of butter (I cant beleive its not butter or something like that) and pepper... Or dieced and steamed or baked with pepper and garlic on top.... Yams are soo tasty the way they are they dont need alot of things done to them.
Eat...Lift....Sleep......Repeat Enjoy the process.. but crave the goal.

okay, the corn bread and biscuits made me cry.........I am dieting here!!!!! I compete on Saturday and here come these recipes in my inbox...............  These are going to be tried AFTER saturday though, but with all the things I want to eat after my contest I will either blow up or get sick so I will have to sparse out these goodies!!! I want to maintain a somewhat clean diet toward next years competitions. All kidding aside, these sound great!!! Linda

Just bake 'em. Microwaving isn't nearly as good. Eat straight. Organic are MUCH more tasty than conventionally grown suckers. When baking put them on foil so that when they bleed (they will), you don't have a carbonized mess to clean up. Don't forget to poke a few holes in them before baking with a fork. Yum.

I have never cooked them before and for some reason never really wanted to. I had some over the last weekend at Stubbs in Austin and they were awesome, so I figured I better figure it out. I just got to looking on the net and could not help but post some of these. So far my favorite is LOUISIANA 'POSSUM AND YAMS. I will have to set my traps out tonight to try and get some fresh Possum, that roadkill kind is a little tangy.

try boiling the yam with alittle bit of sugar, makes it taste like sweet potatoe..very nice fried yam is also very good, you can serve that with omlets....hmmmmm yummy
