Healthy Pineapple Poppy-Seed Bread Makes: One loaf Ingredients: . 1 ½ cups whole wheat flour . ½ cup whey protein powder . 1/3 cup sugar substitute . 1 teaspoon baking powder . 1 teaspoon baking soda . 1 can crushed pineapple in juice . 1/3 cup skim milk . 1 teaspoon vanilla extract . 1/2 teaspoon almond extract . 2-3 tablespoons poppy seeds Directions: . Mix flour, sugar sub, whey protein, baking powder, and baking soda in a large bowl. Add the pineapple, (including the juice), milk and extracts. . Stir until dry ingredients are moistened. Add poppy seeds. . Lightly coat an 8-x-4-inch loaf pan with nonstick cooking spray (nonfat). Spread batter evenly in pan, and bake at 350 degrees F for 35-40 minutes. . Remove bread from oven, and let sit for 10-15 minutes. Let bread cool on a wire rack before slicing. Nutritional Information: Serving size: 1 slice Calories: 100 Fat: 1 g Cholesterol: 0 mg Protein: 10 g Carbohydrates: 17 g Fiber: 2 g Sodium: 105 mg

That would be cool. Honestly I've never made it.. I just get a newsletter with this stuff and post it in here.. so you don't have to get the rest of that newsletter. Their recipes are pretty good. I'd think vanilla flavor would be best. Less of a taste so that the protein goes unnoticed. If you do it WDNinABQ.. please do let us know... if it's a winner.. I'll have to nut up and cook.

OK, I done whipped up a loaf and had two slices (one from the heel, cause you gots to check the crust, and one from inside), and here's my report: It's not bad. The biggest problem I have with it is that it's a little bit bland. The next time I make it, I'll try subbing 1/3 cup Orange Juice concentrate for the milk (though you add a lot of carbs that way, about 3g/slice, so I'll probably swap out a bit of flour for some more protein powder -- actually, I want to do that anyway, as 1/2 cup of the protein I used is only 54g, so my final bread is actually closer to 19g carbs, 6g protein). Bottom line: It's a keeper. Three other notes: The recipe calls for 2-3 Tbsp. of poppy seeds... Unless you love poppy seeds, 2 Tbsp. is plenty. This bread was pretty dense (it's a 2 pound loaf), but that might have been because my baking powder and baking soda are pretty old and might not have much action left in them. I'll probably pick up some wheat gluten, and mix a bit into the bread next time I make it. This will raise the protein level and also help with the leavening a bit.

Man that sounds awesome. I was hoping for something good to come of this. You certainly have the chef skills. Okay, so I'm seriously considering going to the store and buying the ingredients I need and giving this a go. It does sound great. Kinda easy to make. Healthy. See, I'm missing out by not cooking a bit more. I'm glad you tried this one. It's motivating me to do something other then grill chicken all day long. Thanks for the update! Much appreciated.

Oh my.. dude! I did it! I made my first loaf ever. I was motivated. I went to Albertson's and bought the stuff. It was a no-brainer once I started going. Baked.. Done... Had my first slice. I see what you mean. It's nice. A bit bland.. but a total keeper. I was pretty excited to have actually cooked on my own something other then chicken. You have no idea what a huge accomplishment this was. Anyway, now I've got my little loaf in the fridge. I'll have another slice later. But it's not bad. Very easy to make. Takes little to no time. And it's a nice healthy snack. Thanks for testing this one out. I did it!!!
