So I had been thinking about it, and figured someone else has done it before, decided to have my own go at it.
1 to 1 1/2 cups quick oats
3 tablespoons All natural peanut butter
1-2 teaspoons flaxseed oil
1/4 cup milk
2 scoops chocolate protein powder
2-3 ounces of dark chocolate
Combine milk flaxseed oil in a pot and begin to heat slowly, stir in the protein powder and make sure it mixes well. Be sure to bring this up warmer slowly and carefully so it doesn't stick to the bottom of the pan. Once it has mixed well and is warmer you can add the peanut butter, and stir it, eventually it will become a nice consistent mixture, keep the heat low while you do this. At this point you can take the heat off and add the oats, being sure to get a good mix and coat. You may only need 1 cup of oats, this was all experimental, 1 seemed too few to me but 1 and a half was too much.
I coated my pan with a little flaxseed oil so it wouldn't stick. Protein makes handling these cookies very difficult and sticky. Spoon out the mixture or form into balls and flatten on your pan or surface.
You can heat the dark chocolate in a double broiler, or else over really low heat in a pot. Next spoon and drizzle it over the tops of your cookies. Cover and chill till they are as firm as you would like them.
The protein makes them a bit more chewy than standard no bake cookies, but still they are a nice healthier snack, maybe not the best for while cutting, but they supply you with some good fats, some good carbs, great protein, and a minimal amount of sugar depending on your dark chocolate.
Edit: You might consider adding a pinch of salt in the begining, up to you.
