Chicken and Rice - Sunday, June 12, 2005 3:45 PM ( #1 )
hey guys just wanted to post this recipe sorry dont have nutritional information I dont know how to do all that.

Brown Rice , 2 cups
2 Large chicken Breasts diced
Lupos Lemon and Garlic Marinade, 3 tsp
Garlic Powder, 2 tsp
Salt, 2 tsp
Red Pepper, 1/2 cup
Green Peppers, 1/2 cup
Onions 1/2, cup
Pre Cut Diced Tomatoes half a can
Curry Powder, 5 tsp
Plain yougurt, 1/2 a cup


Cook the brown rice add a little salt if you please
On the side take another pan
add 2 tsp Extra Virgin Olive Oil
Throw in the chicken add 3 tsp of Lupos Lemon and Garlic Marinade (sounds weird yepp adding marinade while cooking)
Add Red Peppers, green Peppers and Onions
Once the rice and chicken have cooked put the chicken into the rice pan
Reheat the rice add yogurt, curry powder, pepper and whatever condamints you like
Stir, it should look sorta wet and not very dry. If its dry you need more yogurt.
Add the tomatoes, cover pan let it cook for 5-10 minutes.

If you want it spicier just add more curry powder, salt to taste of course.

Your food should look a bit moist once done but not too watery, so the rice goes down easy and its not dry and untasty!

Then eat it enjoy!
