Sounds good! If the chicken breast is skinless, that part gets 100% db approval! The vegetables, of course, always rock! The more the merrier! The noodles can be a cause for concern. Are they whole wheat, or just the usual? Are you using the flavoring packet (it doesn't look lke it)? If yes to both, they get a 5 (yeah for calories and carbs, nay for non-optimal carbs and high sodium/MSG). Can you switch out regular soy sauce to low sodium version? I'd also switch out the garlic salt for either powdered garlic, or saute some crushed garlic when you add the vegetables. Add some good fat and saute the chicken in olive oil? Maybe you can substitute whole-grain pasta for the noodles, but of course, that adds a preparation step. Sounds yummy, in any case!

Yum, I make chicken/beef stir fry. No noodles tho. You should sautee your veggies first in the pan in some olive oil. Mushrooms, peppers, and onions work great. Broccoli is good in there too. After you cook that, remove the veg and cook the meat in there. When meat is near cooked, add veggies back in and it's ready to serve. Goes great with a side of rice!

sounds really good man, i basically eat this everynight. ill try it with rice tonite instead of noodles.

my variation to this easy recipe: Instead of using straight olive oil, i use a bit of sesame oil also. It gives it a little something extra. while the chicken is cooking in the oil, toss in some (low sodium) soy sauce, minced garlic, cayenne pepper, crushed red pepper, basil, oregano, rosemary, and crushed nuts if i've got em. Then, as the chicken is finishing, toss in the frozen veggies, and a little more (low sodium) soy and assorted spices. Serve over brown rice.
