Buffalo Steaks

I usually do not buy meat at Wal-Mart but last week I found some Buffalo steaks there and could not resist. Grilled them like any other steak and they do have some great flavor, but these particular ones were a bit on the tough side. I think a 50-50 marinade of red wine vinegar and Worchester sauce with a little lemon juice would improve that a lot. They have some great nutrition. For 4 oz Calories 130 Total Fat 3g Sat 1g Trans 0g Cholesterol 75mg Sodium 50mg Carbs 0g Protein 26g The down side is the price, $8.62 a pound. I caught it on sale for $6.03 a pound. The steaks I got averaged about 8oz so the price was around 3 bucks apiece. I have a couple more in the freezer and plan to try a stew with them and will post the results and recipes.

Yesterday I used my remaining Buffalo steaks to make beef, or rather, Buffalo stew. I used a basic simple beef stew recipe and it really turned out great. These things are a bit on the pricey side but they are good and low in calories and fat while high in protein. The ground Buffalo is very good as well and makes a great burger. I suspect it would also work well for anything requiring ground beef. I would really recommend this for anyone wanting to keep protein high and calories and fat low.

Its good stuff. Deer is as well, particularly if mixed with about 35% lean ground beef.

Yeah I quite like deer, but it can taste pretty potent or gamey. I never did like ground deer (burgers), but I never mixed it with beef either. I bet it's good!

snatchula Yeah I quite like deer, but it can taste pretty potent or gamey. I never did like ground deer (burgers), but I never mixed it with beef either. I bet it's good! It can be snatchula, but it depends a lot on where the deer was taken. I'm lucky, as in the rural midwest they are pretty much corn feed and seem to have a better taste, and a bit more tender. Try mixing your with some lean ground beef, even up to 50%. I think it will improve the taste.

I'm from the rural midwest too! I've lived abroad for the better part of the last 3-4 years, so it's been a while. But if I remember correctly, doe tended to be a lot tastier. We usually managed to get doe out of season too, since it's hard to enforce regulations on people who hunt in their own "backyard." Mmmmmm... I could really go for some fried tenderloin right now...

Nice to see another midwesterner here snatchula. Yep, it is easy to take one out of season though you will pay hell should you get caught. Young does do sometimes tend to be a bit more tender. A lot of it depends on what the favorite local crop is and the amount of farmland in the area. The problem we are having around here is all the big city people moving in. They buy 5 acres, get a horse and call themselves farmers. They also complain like the dickens if someone hunts. Some deer tenderloin does sound good.

Bow season here opens October 1st, (I think) and We have been making some early morning trips out to the area we plan to hunt. Seeing lots of deer, many mid size does and some fair size young bucks. I'm not going for trophy, but for the best eating. I think you can take two with a bow now so I might get two young deer.
