Italian Omelet

3/4 cup egg substitute
1 tablespoon chopped fresh basil
1 roma tomato, diced
1 ounce crumpled feta cheese

Spray a large nonstick skillet with cooking spray and heat over medium-low heat. Add egg substitute and cook over medium-low heat. Gently lift cooked edges and tilt the pan to allow liquid egg substitute to flow under cooked portion. Continue this until all liquid portion of egg is gone. Gently flip cooked egg with wide spatula and place basil, diced tomatoes and feta cheese over half of the omelet. Fold omelet over and heat through.

Makes 1 serving
Serving Size: 1 omelet

Oat-Bran French Toast

2 cups nonfat milk
1/3 cup reduced calorie maple syrup
1/2 cup egg substitute
1 cup oat bran or oat flake cereal
2 teaspoons cinnamon
12 slices reduced calorie whole wheat bread

Combine milk, syrup and egg substitute and mix until blended. Combine oat bran and cinnamon in a separate bowl and mix well. Dip bread in the egg mixture and then in the oat bran mixture (both sides). Heat a large nonstick skillet over medium heat and cook until golden brown on both sides. Serve with syrup.

Makes 6 Servings

Choclate Whey Waffles
1/4 Cup of Arrowhead Mills Oat Meal Flour
2 Tablespoons of Splenda
1 Tablespoon of Cinnamon Spice
1/2 Cup of Non Fat Milk (Omit While Cutting- Sub With Water)
1 Scoop of Low Carb Low Fat Choclate Whey Powder
1/4 Cup of Egg Whites

You can adjust the amount to suit your needs.


Mix all Recipes with Mixer. Spray waffle maker with on Non Fat butter Spray. Cook on Wafflemaker for 5 to 6 minutes. Makes about 4 waffles. Have with No Sugar syrup (Omit While Cutting)

Adkins muffins!
These are awesome!! I got some American Whey Bananna Blast protein and mixed in 4 scoops for an extra 88g of protein! I made six large muffins. This is what I'm snacking on all day!
Total:
720 calories
36g carbs
196g protein
6g fat
(not counting cals and fat from protein)
